Happy Wednesday.....

It rained for much of the day, hopefully it will take the humidity away...it has been steamy hot!!

Had a morning of errands, shopping for our BBQ this weekend and then thrifting with my daughters. Found some fun stuff.......a visit with my Dad this afternoon and then an afternoon nap.

Scrambled eggs and toast for dinner...that makes me happy....Hubby golfing today and out for dinner which means scrambled eggs and toast is acceptable for dinner.

Hopefully some sewing and crocheting tonight.......bought some bright t-shirts at the thrift store to cut into strips so I can finish my rag rug.

Tomorrow off to the lake for the day!!!

Happy Wednesday!!

It is a beautiful sunny day today, had my morning walk through the woods and just having a cup of coffee thinking about how my day is going to look.

I am working on a t-shirt rug right now, it is kind of fun.....a massive crochet hook and big stitches make the work quick and easy. The biggest part of the project is cutting the t-shirts into strips. I used old t-shirts my family did not want anymore, lots of bright colours. For my next rug I will have to go thrifting or cut up fabric because I ran out of old t-shirts from our house.

I have to work nights tonight which I always dread but this too shall pass.

I'm having a peaceful day........some coffees, some shopping, some thinking about Fall/Winter shopping, visiting my Dad, afternoon napping...........

Veggie Burgers.....

Veggie burgers......
-2 tbsp vegetable oil
-1 onion diced
-1 clove of garlic minced
-3 green onions diced
-1/2 tsp cumin
-3/4 cup diced fresh mushrooms
-1 15 ounce can pimento beans(I use whatever can of beans I have...I like black beans)
-1 tsp parsley
-salt and pepper to taste
-olive oil for frying (I have not tried them on the grill because I think they may fall apart if they stick to the grill.......I know my tuna burgers have to be fried because they fall apart on the grill)

De-gas the beans....I do this by rinsing the beans in a strainer several times with cold water until I do not see the foamy water anymore.....and then I let the beans sit in the strainer for a while to let the water drain.....

sautee onions and garlic in oil for 3-5 minutes until onions are soft * add green onions, cumin and mushrooms and cook for another 5 minutes until mushrooms are cooked, set aside * mash beans with fork or a food processor works better, until mashed * add mushrooms to beans and add parsley, salt and pepper *stir until well combined * shape mixture into patties * heat 2 tbsp of olive oil and cook each patty 3 minutes on each side approxiamately * enjoy with your favourite toppings...we love hot peppers, lettuce and cheese............Enjoy!!

Yes, I think Sunday is officially my favourite day of the week!! Sunday mornings are for slow to wake family members, fresh homemade waffles and strong coffee. Plans for the day usually include a few loads of laundry, a little sewing, some work in the garden, a casual walk through the woods and just futzing around. That is a perfect day!!

TGIF.........what a beautiful day!! It is nice and sunny and warm with a bit of a breeze.....simply wonderful....started my day with a bike ride with my younger daughter and her friend to the city market....enjoyed a sweet and a coffee on the patio before our adventure back home.

This weekend will be a chore weekend, doing some stuff with the hedges and the gardens, I was so happy to see the rain this week, it really did put a smile on my flower's faces.......

Did I tell you how much I love daisies??? They are very simple and pretty......

What a beautiful morning!! It is suppose to heat up today and tomorrow, we have had some really nice summer days with no humidity but it is coming back!!

Today is the big soccer game.....go Deutschland!!

I managed to finish many of my chores yesterday, just some piles of laundry to put away today. Hubby and I went downtown for a walk last night and stopped in at Symposium for a beer and a coffee for myself...spiked with Bailey's........on the way home we stopped for a slice of pizza. We did some people watching while sitting on the patio at Symposium....always lots to see!!

Have a great weekend......I think I am going to do some thrifting today after the game!!
