Linzer Cookies with Fruit Jam

This is a variation of Eli Zabar's delicious shortbread cookies.

Ingredients
3/4 pound unsalted butter at room temperature
1 cup granulated sugar
1 teaspoon pure vanilla extract (I like to add extra vanilla)
3 1/2 cups flour
1/4 teaspoon salt
3/4 cup good raspberry (or preferred fruit jam) preserves
Confectioners' sugar, for dusting


Directions
Preheat the oven to 350˚ degrees F.

In the bowl of an electric mixer fitted with the paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.

Roll the dough 1/4-inch thick and cut 2 3/4-inch rounds with a plain or fluted cutter. With 1/2 of the rounds, cut a hole from the middle of each round with a heart or spade shaped cutter. Place all the cookies on an ungreased baking sheet and chill for 15 minutes.

Bake the cookies for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature. Spread raspberry preserves on the flat side of each solid cookie. Dust the top of the cut-out cookies with confectioners' sugar and press the flat sides together, with the raspberry preserves in the middle and the confectioners' sugar on the top.

Happy Saturday Morning...having my third cup of coffee and sewing.....I love early mornings especially when I have time to sew!!....The sun is shining but it is chilly out today..where is my nice weather?...my tootsies are cold!!.....nothing too much on the agenda today....the Mister is in a hockey tournament all weekend and I will futz around the house....I have my usual weekend stuff to do.... and then a visit with the Mister's Uncle who is in hospital recovering from a stroke and cerebral bleed....I want to take him for a wheelchair ride today and get him out of the four walls.....a visit with my Dad tomorrow and then it will be Monday morning at 6.....I have to be at work at 6 on Monday...ugghhhh....oh well....I may pop in the fabric store too!!.....sssshhhh ........Don't tell anyone I have a fabric addiction!!...I want to order my Lotta clogs this weekend too.....<3

This green cocktail has none of the nasty elements of Dr. Seuss’s classic holiday character. On the contrary, it’s reminiscent of the changed Grinch with the sweetest flavors; melon-flavored Midori and lemon juice. It’s all sweetened even further with a little simple syrup. Add a maraschino cherry for the garnish for color and to represent the changed heart of the green man.

Yield: 1 Drink
Ingredients:

* 2 oz Midori
* 1/2 oz lemon juice
* 1 tsp simple syrup
* maraschino cherry for garnish

Preparation:

1. Pour the ingredients into a cocktail shaker with ice.
2. Shake well.
3. Strain into a chilled cocktail glass

Sunday Night


Well two weeks has passed since school started. The kids are settling in nicely....takes a bit to get back to a routine. Even the parents need to get into a routine. I have been off work for two weeks following my surgery and am scheduled to go back at the end of this week. I have not got a lot accomplished as I was to do nothing heavy the first week and then I was just plain lazy.....I should get some stuff done in the next couple of days so I do not have to do it when I go back to work. I have been sewing...I am determined to sew stuff with all the fabric I bought this summer when there were sales.....I have lots and have been sewing pretty much everyday. I have made several uniform tops for work and made a few tops for everyday with jeans.....I made several dresses over the summer months which I packed away as the weather is cooling off.

Back to School


Hard to believe another school year is upon us....that summer just flew by....the weather is so fall like today....cool and dull.....
I have one going into grade 10 and one starting University....hard for me to believe that time has passed that quickly......
Today will be a day of errands...I worked part of the long weekend and then did some never ending sorting and tidying....
Tomorrow my surgery...not really something I can be relaxed about...just want to get it over and done with and I am nervous about the recovery as I want to get back to work as soon as possible...

Feels like Fall


Hard to believe it is the end of August....today we have a pigroast to end the summer gatherings....well that is not true..one more weekend of camping on Labour day weekend....of which I do not camp out....my family camps out and I visit the camp ground during the day....haha...it is always the weekend before school starts and I like to have that weekend to prepare myself for the coming week......I am unfortunately also working part of that weekend.....
Made some fun nursing uniform tops for work....will make a couple more to use up some of the fabric I bought on a whim because it was on sale.....I am going to make a long sleeved flannel top for my jeans as well...I have cut out the pattern...we will see how it works out.....I have seen lots of nice fall fabric...I have some patterns in mind...
Going to Michigan next week to watch a baseball game and do some back to school shopping...the kids are excited!!
Baking a couple of cakes for the pig roast today.....

Happy Thursday....


Do you know why it is a happy one? My hubby left for a 4 day golfing trip and the house is very quiet.....I think I will enjoy that...no meal preparation and just a lot of sewing....I will enjoy the outdoors and just enjoy the quiet as my younger teen will be home from Europe next week...the house will fill with excitement then....I am thinking about back to school already...thinking about the driving schedule...one going to University and the other grade 10...slow down life...you are moving too quickly......
I have a few sewing plans in mind....I have enjoyed making some fun uniform tops and now I would like to learn to make some uniform pants......that will be a winter project....I have extended my sewing room into the main basement.....more room for fabric storage and hanging my unfinished pieces....
